In honour of National Cupcake Week I decided to try my hand at icing my cupcakes for the first time. Proper piped icing. I have always cheated and used glace icing before. I spent all day yesterday getting my ingredients ready & buying my piping bag (which I actually found quite hard to find, ended up getting it in TK Maxx).
I made one batch of vanilla mixture and one batch of chocolate mixture from my new Primrose Bakery cookbook. I made some plain chocolate and some plain vanilla cupcakes but also took a risk and tried a marble effect – with some of each mixture! The chocolate cupcakes especially are so light and airy… so yummy! The vanilla ones are a little more dense but still nice.
As for the icing….ahem! I tried to do a marble effect with this also – using half chocolate and half vanilla buttercream in the piping bag. It kind of worked although I think the buttercream was a little too runny. The Primrose Bakery book only shows you how to ice using a palette knife, not by piping – so maybe their recipe was not quite suited for piping??
Anyway, Gary turned out to be the best at handling the piping bag (surprise, surprise) and I iced a few with a knife (an ordinary one mind, I didn’t have a palette knife lol..)!
We also tried some plain vanilla iced ones and put pink glimmer sprinkles on them.

PS – I nearly made myself sick by eating cupcake mixture and buttercream all morning! Think I will have to pace myself with the actual finished products or I will have massive sugar overload!
