Easter Baking

I made some chocolate cupcakes with chocolate frosting (recipe from Hummingbird Bakery Book) and added some mini eggs & crumbled flake on top. Yum :)

And of course I had to make my fav red velvet cupcakes too. Iced by myself & Bec after a few glasses of Pimm’s lol..

There are lots of cupcakes left, which I will regrettably be throwing in the bin today as I am back to trying to eat healthy lol..!

    those cakes look yummy! but how do you find the hummingbird recipes? my friends bought me the book and i thought they were pretty dry and rubbish. we tried about 4 or 5 different ones and none of them were winners.

      Oh really? I really like the recipes – they've always turned out nice & moist for me, esp the red velvet ones. They do say not to overmix as it makes them dry & heavy.

        Nic's cupcakes are fab :) Please don't throw them in the bin, that makes me so sad :( Don't suppose they will keep till tomorrow night???!

    The bin?! You're lucky I don't live closer otherwise I'd be round there with my cake tins banging on your door!

    To add to the previous comments – I've never failed with a Hummingbird Recipe – they're amazing! (Except the nutty apple loaf which went very wrong somehow!)

    Mmmm yum, chocolate overload on the first ones! You are going to put me to shame at this cupcake course, at this rate you should be teaching it yourself :)
