Yes, as it is Saturday I have been in the kitchen making scones again! I had a random idea for avocado scones and didn’t even know if it would work. I love avocados and usually have them in green smoothies or make guacamole. After some Googling I made up a recipe using bits from recipes that I found (they were all American so all quantities are in cups).
Here is how I made mine:
You Will Need:
1 cup plain flour
1 cup wholemeal flour
3 tsp baking powder
1 tsp salt
2 eggs
1/2 cup buttermilk
3/4 cup mashed avocado
How To Make:
Mix flours, baking powder and salt in a bowl. Add the mashed avocado, eggs and buttermilk and mix until combined. Pat out onto worktop and cut out rounds. I got 6 large scones from this amount. Easy peasy. Bake for about 10-15 mins at 200 deg C.
I was really pleasantly surprised with these as I had no idea what they would turn out like. They were lovely straight from the oven with butter, and even better – with some grated cheese on top!! I will definitely make these again.

That's a very interesting combination, I never woud have thought of making avocado scones! I might have to try some now!

Yes you can taste the avocado – it gives the scones a nice moistness too!
