Scones on Saturday – Avocado Scones

Yes, as it is Saturday I have been in the kitchen making scones again! I had a random idea for avocado scones and didn’t even know if it would work. I love avocados and usually have them in green smoothies or make guacamole. After some Googling I made up a recipe using bits from recipes that I found (they were all American so all quantities are in cups).

Here is how I made mine:

You Will Need:

1 cup plain flour

1 cup wholemeal flour

3 tsp baking powder

1 tsp salt

2 eggs

1/2 cup buttermilk

3/4 cup mashed avocado

How To Make:

Mix flours, baking powder and salt in a bowl. Add the mashed avocado, eggs and buttermilk and mix until combined. Pat out onto worktop and cut out rounds. I got 6 large scones from this amount. Easy peasy. Bake for about 10-15 mins at 200 deg C.

I was really pleasantly surprised with these as I had no idea what they would turn out like. They were lovely straight from the oven with butter, and even better – with some grated cheese on top!! I will definitely make these again.

PPS - Sorry my pictures are even more horrendous than usual but we have lost the charger cable for the camera so I am having to use my phone camera which is pretty poor!

Wow, that's really unusual, but I'm a huge avocado fan, so may well give these a go – thank you for the recipe x
